How E numbers work: what the first digit tells you

The three-digit number after the letter E is not random: it carries information about why the substance was added. You only need to memorize six ranges, and after that, reading an ingredient list becomes much faster—the code immediately shows whether the additive is for coloring, preservation, or maintaining structure. What the number does not tell you is anything about safety.

What the letter itself means

E stands for Europe. The code is assigned to a substance that has undergone evaluation and has been added to the list of approved additives. In other words, the presence of a code means the additive has been reviewed and authorized, not the other way around.

This is the first thing to keep in mind: a code is a sign of regulation, not of something foreign. Under these codes, you will find baking soda, citric acid, ascorbic acid, lecithin, pectin, and other substances that do not alarm anyone when written out as words.

Beyond these, the ranges become less common: E900s are glazing agents, antifoaming agents, and sweeteners; E1000s are enzymes, modified starches, and others.

Boundaries are conditional

A single substance often performs multiple functions, and the number reflects its primary, not its only, function. Ascorbic acid (E300) is listed under antioxidants, but it also acts as an acidity regulator. Citric acid (E330) acidifies and binds metals. That is why the function is usually written next to the code in the ingredient list: "preservative E202," "stabilizer E450." The function indicates why the additive is there, and the code indicates exactly what it is.

What the number does not tell you

Safety. Within a single range, there are substances with different safety assessments. Adjacent numbers do not inherit properties from one another.

Origin. E160a represents carotenes, which can be derived from carrots or synthesized; E322 is lecithin from sunflower or soy. The code is the same.

Quantity. Limits are set separately, based on products and maximum levels, and are not reflected in the code.

Current status. Authorization can be revoked—as happened with titanium dioxide E171—while the code remains the same.

How to use this

  1. Read the first digit to understand the purpose. This saves time: in a second, it is clear whether the additive is for coloring or maintaining structure.
  2. Do not look for a "list of harmful additives." Such lists have been circulating online for years and usually do not match any current official list.
  3. Look at the length of the ingredient list, not just an individual number—a sign discussed in our article on E numbers in ingredients.
