Xanthan gum, guar gum, carrageenan, pectin, modified starch — this is a set of words that looks alarming on an ingredient label but means something quite boring: the product needs to have the right consistency and not separate before its expiration date. Most of these substances are plant-based polysaccharides, and they behave like fiber during digestion.
What they do
Thickeners increase viscosity: they bind water and prevent liquids from spreading. Stabilizers maintain structure: they prevent separation, settling, and precipitation. Often, these are the same substances serving different roles.
The tasks they perform include:
- preventing yogurt from separating into whey and solids during storage;
- preventing ice cream from turning into ice with large crystals;
- keeping sauces thick so they do not run off a spoon;
- preventing sediment in plant-based beverages;
- helping jam set without long boiling times.

About modified starch
The word "modified" here has nothing to do with GMOs, and this is the most common confusion on the topic. It refers to the physical or chemical processing of regular starch so that it does not break down during heating, freezing, or in acidic environments.

What is known about tolerance
Most of these substances are not absorbed and reach the large intestine, where they are fermented by microflora—that is, they behave like soluble fiber, which is discussed in the article about fiber.
Hence the only common practical effect: in large quantities, they can cause bloating and loose stools. This is dose-dependent and usually occurs with heavy consumption of products high in thickeners, not from a single cup of yogurt.

Thickeners without a code
