Phosphorus is an essential element: it is a component of bones, cell membranes, and molecules that transport energy. However, added phosphates are one of the few groups of additives where the concern is not the substance itself, but the quantity, and where the distinction between natural and added truly matters.

What they do in a product

In meat products. They retain water: protein binds more moisture, making the product juicier and heavier. This leads to a second, less pleasant function — increasing the yield of the finished product from the same amount of meat.

In processed cheeses. They prevent protein and fat from separating and are responsible for a smooth, spreadable texture.

In dairy products. They stabilize protein during heating so it does not curdle during sterilization.

In soda. Phosphoric acid provides a tart taste that balances the sweetness — a mechanism explained in our article on soda.

In leavening agents. An acidic component that reacts with baking soda.

How added phosphorus differs from natural phosphorus

This is the only meaningful distinction in this topic. Phosphorus from regular food — meat, fish, dairy, legumes, nuts — is bound in organic compounds, and only a portion of it is absorbed, typically about half to two-thirds.

Phosphates added as an additive are in a free, easily accessible form and are absorbed almost completely. In other words, the same milligram of phosphorus "weighs" differently depending on the source.

For a healthy person with normal kidney function, this does not create a problem: the excess is excreted. It becomes significant where excretion is impaired.

Who should monitor their intake

How this is noticeable in practice

The most obvious case is meat with an injected solution. Phosphates, along with salt, allow a significant amount of water to be retained in the piece, and the buyer pays for it as if it were meat. When cooked, such meat shrinks noticeably and releases a lot of liquid.

What to look for

  1. The ingredients of whole meat and fish. There should be nothing there except the product itself.

  3. The amount of soda in your diet. Phosphoric acid is a significant source of added phosphorus with regular consumption.
