"Clean label": how a short ingredient list is achieved without changing the product

There is a confirmed trend: consumers prefer products with short and understandable ingredient lists. The industry has responded not by changing the products, but by changing how the list looks—a trend known as "clean label." Some of these techniques actually mean a simpler product, while others only mean a simpler label.

Where the trend came from

It stems from observing behavior at the shelf: all else being equal, people choose the product with fewer unfamiliar words. Shoppers avoid E-codes even when they represent substances like baking soda or citric acid—this is covered in our article on acidity regulators.

Manufacturers have two paths. The first is to actually simplify the recipe, which is expensive and often reduces shelf life. The second is to keep the functions but label them differently. The second is cheaper and therefore more common.

Four techniques

Replacing an additive with an ingredient. A substance without a code does the same job: rosemary extract instead of an antioxidant, lactic acid bacteria cultures instead of a preservative, yeast extract instead of a flavor enhancer, beet juice concentrate instead of a colorant.

Moving the function to the raw materials. The additive is added at an earlier stage—in the flour, seasoning, or filling—and does not appear in the final product's ingredient list if it performs no technological function in the finished item itself.

Composite ingredients. Terms like "filling," "glaze," or "marinade" are not broken down if they make up a small portion of the product, allowing a single word to hide its own list of ingredients.

Splitting. One component is listed as several items under different names, each of which moves further down the list. This is most often done with sugars—their names are collected in our article on hidden sugar.

When a short ingredient list is honest

Not every short list is a disguise. There are categories where it is natural:

A sign that distinguishes an honest short list from a shortened one is consistency with shelf life and category. A naturally perishable product with a long shelf life and a short list means that preservation is provided by something else—usually heat treatment, salt, or sugar. Three checks in half a minute

  1. Compare the ingredients with the shelf life. A moist product without preservatives that lasts for months at room temperature relies on something else—sterilization, sugar, or salt.
  2. Look for functional ingredients without a code. Yeast extract, rosemary extract, bacterial cultures, juice concentrates—they perform the work of additives.
  3. Check for composite ingredients. "Filling" and "glaze" without a breakdown imply a hidden list.

About "free-from" claims

A separate layer of this trend includes labels like "preservative-free," "no colorants," "no flavor enhancers," or "non-GMO." Formally, each of these is verifiable, but they are checked against the list of additives, not against functions.

This leads to typical constructions: "no flavor enhancers" on a product containing yeast extract, or "preservative-free" on a product where vinegar provides the preservation. A full breakdown of these labels is in our article on packaging labels.

What this means

The length of an ingredient list remains a useful indicator—but as a sign of the degree of processing, not as a measure of safety.
