How to determine the calorie content of a dish if it is not listed on the menu
Menus often list only the name and price. The decision of what to order is made in a minute, yet there is little information to go on: "pasta with chicken" could be 480 kcal or 1100 kcal, with the difference lying entirely in the cream and butter. There are four ways to find the number before ordering, and they vary significantly in reliability.
Method one: ask. They are required to answer
This is the first thing you should know, and almost no one does: in Russia, the service provider is required to provide the consumer with information about the nutritional value of a dish—calories, proteins, fats, and carbohydrates. This requirement is set out in the Rules for the Provision of Catering Services, approved by Decree of the Government of the Russian Federation No. 1515 of September 21, 2020.
The law leaves the method of disclosure up to the establishment: menu, price list, "or by other means." This explains the situation in the dining room—the calories aren't on the menu, but they exist somewhere: in a separate folder, in an app, or in a printout in the kitchen. Asking "could you please bring me the nutritional information" is not a whim, but a reference to their obligation.
What is wrong with this in practice: the smaller the establishment, the higher the chance that there is no calculation at all or that it was done once three years ago. Chains almost always respond, while coffee shops and small cafes do so less frequently. Method two: estimate based on the dish's composition
The name on the menu usually lists the main ingredients: "Caesar salad with chicken" means greens, chicken, cheese, croutons, and dressing. You cannot calculate it precisely based on this, but the order of magnitude is visible, and decisions should be made based on the order of magnitude, not the third digit.
It is easiest to calculate starting from one number: a gram of fat provides 9 kcal—more than twice as much as a gram of protein or carbohydrates. From this, you can see what drives the count and what does not.

There are no exact increases here intentionally: they depend on how much oil went into a specific pan, and no one knows that, including the kitchen staff. The direction and order of magnitude are more important.

Method three: find an equivalent
If a chain has data, it is also suitable for a similar dish elsewhere: "carbonara" in two establishments differs, but not by a factor of several times. The problem is that you need to search before ordering, while at the table, and a search by name yields recipes, not ready-made numbers.
Separately, it is worth remembering that the numbers in delivery apps are not a measurement. Method four: photograph the entire menu page
The fastest of the four and the only one that works for the entire menu at once. The photo of the page is analyzed by a model: it reads the names line by line and evaluates each item—calories, proteins, fats, carbohydrates, and portion weight.
What is important to understand about the nature of the answer. This is an estimate based on the name, not a measurement: the model does not know the recipe of a specific kitchen, does not see the portion weight, and can only guess about the amount of oil. It answers the question "how much is usually in a dish with such a name," and for this question, the answer is useful: it allows you to compare items with each other and see that a steak with vegetables and pasta in cream sauce are different solutions, not the same.
What you should not expect from it is accuracy down to the tens of kilocalories. The spread between two preparations of the same dish is greater than the margin of error of any estimate based on the name, and it will only become more accurate when the dish is on the table: you can photograph the plate. What to do with the resulting number
The mistake that devalues the whole endeavor: trying to hit an exact number. An estimate based on the name is not suitable for this in any of the four methods, including the first one—the establishment calculates based on a technical card, not by weighing your plate.
What it is suitable for is choosing between items. The difference between 480 and 1100 kcal survives any margin of error, and the decision is made based on that. The difference between 620 and 660 does not, and it is pointless to make a decision based on it.
Second: look not only at calories. Two dishes of the same caloric content with different protein levels are different meals: after one, you will want to eat in two hours, after the other, you will not. There is a separate article about this.
